This is the Masahiro G series MG-612 Yahagiba traditional Japanese sushi chef knife made in Seki Japan. The Yanagiba is the choice knife of the sushi chef for slicing nigiri and sashimi. The knife is sharpened on one side to form a single bevel edge with a slightly concave flat grind on the opposite side for a more precise and uniform cutting edge. The 200mm blade (about 7 3/4") is made of Masahiro Stainless Steel alloy MBS-26 Chrome-Molybdenum and Vanadium Stainless steel with stabilized black Stamina wood handle.
